Greek traditional jam from the skins of bergamot. Incredibly flavorful and delicious. Cooking
Bergamote thoroughly cleaned.
Each strip to twist and stab with a toothpick.
Add to the pot, cover with water, boil for 20 min. then drain the water, pour cold water and leave for a day. During the day periodically change the water.
A day take out toothpicks. Weighed (I had 500g), dbauser sugar, water, lemon juice.
Put it on the stove, bring to a boil, and then cook either on a slow fire until syrup becomes slightly liquid, or (as I do) proverjaem 10-15 minutes, leave to cool, then repeat until refrigerated jam will not be the right consistency.
