Herring balls holiday
A recipe from my childhood. The end of the 80s, when stores "ball roll", and only red (or black) caviar was only available through connections. I think many know this haddock spread in different ways. And I wanted to give a second life to this simple recipe, a snack on the holiday table can apply, or for decoration of different dishes.

Ingredients

  • Wheat groats

    100 г

  • Herring

    200 г

  • Onion

    1/2 шт

  • Spices

  • Vegetable oil

    3 ст. л.

  • Chicken egg

    1 шт

  • Tomato paste

    1 ст. л.

  • Bread crumbs

Herring fillet and onion chopped as fine as possible.

My mom cooked the "sauce" of semolina, but I prefer wheat finely ground, it is more rupanita. Take 100g of cereals, and water - follow the instructions on the package to cook a thick porridge. Let's say I have 100g of cereals - 170ml of water.

In a saucepan heat 3st. L. vegetable oil or butter (to taste) and lightly fry the tomato paste. Add required amount of water (if you want to cook just the "spread" on bread, it's good to add this marinade to enhance the taste of herring).

When the water boils, reduce heat and add cereal, stirring with a spatula to avoid lumps.

Cook on low heat for about 5 minutes, stirring constantly. Add the chopped herring and onion, spices to taste (add salt carefully, because salt herring). I add ground cloves on the tip of a knife, it gives a slightly spicy taste. Porridge should be viscous.

In principle, at this stage, the "toppings" ready. Cool cereal and make sandwiches. For example, bread-butter-haddock toppings-grated boiled egg or slices of cucumber...

But we will make festive balls. Egg yolk separated from the protein, add the cooled down porridge and a nice rubdown. Protein will be needed to grease the balls.

From cereal to form balls with wet hands. Can small and more like meatballs. Large balls filled with a piece of well-cooked egg or fresh Apple (very tasty). Moisten in beaten protein, roll in breadcrumbs.

Fry in hot oil. Allow to cool. It is very convenient to make these balls in advance and store in the fridge. You can decorate with them various dishes.
