Today we have a lunar ninth day of the ninth month. On this day in China, both Koreas and Vietnam is two nines or Joyance (it is also present in Japan, only there it is celebrated according to the Gregorian calendar - September 9). Traditions require that day to get to the mountains, to carry branches of dogwood, drinking hrizantemovym tea (or even better - wine) and there is a sweet cake made from rice flour stuffed with adzuki beans. Its something we will cook with you.

Cooking
Pre-soak the adzuki beans for 4-5 hours
Mix in a saucepan the rice flour with wheat (or glutinous rice)
Add yeast and 1 Cup of sugar
Gradually adding lukewarm water, and knead thick dough
Prepare the filling of azuki. Put the beans to boil, filling it with water to just covered up for her. Need to cook about an hour on medium heat, adding water if boiling
Measure two-thirds Cup of sugar
When the beans are ready, drain it from excess water, place back on the heat and pour half of the measured sugar. Mix well
Grind this mixture into the blender without removing it from the heat. Add the remaining sugar and cook, stirring, another 5-7 minutes
Pour the mixture in a bowl and let cool
Take the container to a double boiler (or a small saucer that you can place it) and place on it a layer of the third test
Carefully, trying not to mix with the dough, put on top a thin layer about half of your paste adzuki
Repeat the previous two steps again
Put another layer on top of the dough, decorate it with fruits or nuts, and the remains of azuki paste. The centre can be decorated with chrysanthemum flower
Place the container in a steamer and set the time approximately 40 minutes
When the cake is ready, remove it from the steamer and remove it from the tank, slide a knife around the edge. The cake is ready. Bon appetit!
To the cake you can also make hrizantemovym tea. Just put in a teapot or gaiwan two or three flower chrysanthemum and add water 90-95 degrees for three minutes. It should be slightly yellowish liquid with a floral aroma and refreshing taste
