Pumpkin cupcakes with honey

Prepare all the ingredients.

Pumpkin to grate on cucumbers.

Beat with a mixer the softened margarine, sugar, salt, honey, lemon juice and egg. Add flour mixed with soda. Stir in the pumpkin, raisins, nuts and lemon zest.

Spread pumpkin batter into molds. (The dough in the molds can be spread almost to the edges of the muffins don't rise very much.) Bake at t=200°C for 20-25 minutes.
