Cold beet soup with homemade yogurt
New take on the classic summer soup - beetroot or kholodnik. This is one of my favorite cold soups. Always looking forward to the season, the young beets to pamper yourself. This time I decided to experiment a bit. A base of beet turned into a puree, and the standard set of vegetables added ripe avocado and smoked chicken. Continue to use starter cultures and homemade yogurt. The soft-boiled egg is almost too unusual innovation, and successfully entered into the beetroot in a new way.
