Milk soup with shrimp
Very interesting soup, light and nourishing. It is possible to prepare not only shrimp, as in this recipe, but still add squid, mussels, fish.

Ingredients

1) Defrost prawns, fish. Put the fish in the pan and make fish broth (I took the head off the trout, 5 steers and 1 small pike).

2) the Broth is cooked for 15 minutes, the fish should be well cooked and will give fat. During cooking be sure to remove the noise. When fish is cooked, take a colander and strain the broth, pouring it into a separate saucepan.

4) stalks of celery, remove the coarse fibre. And cut it in small cubes, in the same way, chop the onion and grate the garlic on a grater.

5) Then in a saucepan you plan to cook the soup, pour the olive oil and butter. Wait until it is well warmed up and put back the onion, fry it about 1 minute, then throw in the garlic.

6) Onions and garlic saute about 5 minutes, until Golden brown, then add chopped celery and fry for about a minute on low heat.

7) Can use ready-made tomato paste, and can make themselves tomato paste 2 tomatoes. Clean them from the skins, cut finely, put in a hot frying pan, add salt, Basil, Cayenne pepper (1/4) and cook over high heat for 5-10 minutes.

9) Pour in the strained fish our (chicken) broth, cook until boiling, then add COLD milk. Bring to a boil, about 2-3 minutes.

10) Add hot sauce and Bay leaf. I took this sauce, can anyone else, with the main sauce is not to overdo it, so the soup was not too spicy.

11) Slice 5 Basil leaves, 3 branches of parsley,3 twigs of dill, 3 branches of coriander.

12) In a boiling soup and throw the shrimp and wait again already boiling over medium heat. Once the soup is boiling, throw the chopped greens and salt, if needed ( to taste).
