Chicken in a spicy sauce
20 years have passed since I bought my first book of Chinese cuisine. It was in German. Since repeatedly traveled to China and was looking for this dish at countless restaurants to check the authenticity of the taste. Never found one yet. Here too, honestly I look through all the recipes of Chinese cuisine. And the house we have once a week just to be - all the 20 years.

Chicken cut into portions (16 pieces) today, I Have two legs without bones - it's hard to find a whole chicken, and consumers have little. But the tastiest part is obtained from a whole chicken, chopped into pieces. Depending on the size of the chicken you may need different amounts of sauce. But it is important to keep the ratio 1:1:1

Garlic and ginger blend in blender or on grater, put on the bottom of the pan.

Pour a mixture of EQUAL parts soy sauce, wine and sesame oil. Instead of cooking wine, you can use port wine, sweet sherry, etc.

Bring to boil, check for sugar and salt. Simmer on low heat until the chicken is cooked. If the chicken is cooked quickly, you can extend a little time to make the sauce absorbed the chicken flavor, but not for very long - there is a risk to digest.
