Vegetarian salad with rice balls
A good alternative to "Caesar". Juicy, fresh taste, but this is a very hearty dish.

Ingredients

Rice (good fit "Japonica" or "Arborio" from Mistral) boil 250 ml of water. Salt. You should get a thick, viscous porridge.

Give porridge to cool slightly. On a plate mix the bran and the mixture of dried herbs (Italian or Provencal). Break the egg into a bowl and separate 1/3. Blind from cereal balls, then each roll in bran. Fry in deep fat. Spread on paper towel to excess fat stack.

The remaining part of the egg "grab" in the microwave, add yogurt and grind well with a fork, then add the Dijon mustard and dried herbs.

On a plate put the lettuce (pre-wash, dry and tear with hands), cut into cubes or feta cheese, olives, in the center of the mound of rice. Serve with egg-mustard sauce. Bon appetit!
