I have tried different recipes, but most of all I like this one.

Cooking
Separate the yolks from the whites. To the yolks add salt on the tip of a knife. Whisk. Add milk, then flour with baking powder. Mix everything together until smooth.
Separately, beat whites with sugar to form a white foam. Very carefully enter them in our dough in slow motion with a beater or spoon. Pour the melted butter into the mixture. Lightly stir.
Bake in a pan without oil over medium heat. Once around the pancake will "Valderice" can turn. I added a little in the pan with vegetable oil when frying as burn.
