Prepare your ingredients. Leaves and grass wash well. Lemon cut slices. Truncate the currants from the stems.
First, let us pour the gelatin with cold water. For delicate jelly on our volume of water you need 10 grams for jelly medium density - 20, and for a dense jelly - 30 g. Leave to swell for 30-40 minutes.
Meanwhile, stack the leaves, herbs and lemon in a saucepan. Pour water and put on medium heat.
Because the jelly is quite spicy, the balance of flavor desired sweetness. But we're watching my figure... And I originally wanted to make only with fruit sugar. Sweet. But something was missing... And then I realized: not enough caramel taste of brown sugar... God bless her with a figure... Let it be very tasty!
Allow to boil the syrup but do not boil! Leave to infuse for 10-30 minutes. Remove the sheets. Add gelatin and again heated. But do NOT allow to boil. It will not hurt to drain again.
To serve our jello we'll be glasses. First, pour half a wine glass of syrup. Put in the fridge for at least an hour to jelly grabbed. Then pour the currants, decorate with leaves of tarragon and pour sugar to cover the berries and refrigerate until fully cured jelly.
